I was going through my freezer this past week, and I realized that I have an enormous amount of food already prepared – thanks to freezer cooking! So, this week marks a deviation to my elimination diet plan as well as my usual menu planning.

Well, after a week off on vacation and lots of meals eaten out, I’m back to Menu Plan Monday. I am also starting my Clean elimination diet today, so the menu has been adjusted accordingly.
Thank goodness for planning ahead since almost all of my quick and easy foods are gone on this elimination diet. This is where it really comes in handy to plan ahead (like the wild rice that has to simmer for almost an hour!) for your meals. Especially with soccer practice all week!

One of my goals this year is to eat healthier. To that end, I have watched Food, Inc., eliminated most fast food, and planted a garden (I even ate a salad with lettuce from my garden for the first time!).

Menu planning is something I used to do quite often (albeit loosely), but I have strayed recently. So, I’m getting back on track, since menu planning is something that you can do that is not only easy, but will also save you time and money.
