It’s that time! Menu plan Monday! As I mentioned last week, menu planning is something that is easy to do and can save you time and money! Check out my previous post for tips.
Here’s my menu for this week:
Monday: Dream Spaghetti
Tuesday: Tender Baked Chicken with Spectacular Sauteed Green Beans
Wednesday: Tater Tot Casserole
Thursday: Leftover Buffet
Friday: Homemade Pizza (I use this crust recipe with 1 1/2 cups white flour and 1 cup white wheat flour)
Saturday: Hamburgers/Hot Dogs on the Grill with Corn on the Cob
Sunday: Cheesy Beef Mac
RECIPES:
Dream Spaghetti – Recipe adapted from Homemade Gourmet’s original recipe
8 oz thin spaghetti, cooked and drained
3 cups spaghetti sauce
1 lb ground beef, cooked and drained
16 oz cottage cheese
8 oz sour cream
1-2 cups mozzarella cheese, shredded
Preheat oven to 350. Cook pasta and drain. Combine sauce and cooked beef. Combine sour cream and cottage cheese. In 9×13 baker, layer bottom with cooked pasta, spread on cheese mixture, top with meat mixture, and sprinkle with mozzarella cheese. Bake for 30 min. Yield 6-8 servings.
Cheesy Beef Macaroni
1 lb ground beef, browned
1 can whole kernel corn
1 can cream of chicken
8 oz Velveeta cheese
2 ½ cups cooked elbow macaroni
Brown meat, then add corn, soup and cheese. Stir until cheese is melted. Stir in macaroni until coated. Transfer to 9×9 square baker. Bake 350 for 20-25 min. Yield 4-6 servings.
