Well, after a week off on vacation and lots of meals eaten out, I’m back to Menu Plan Monday. I am also starting my Clean elimination diet today, so the menu has been adjusted accordingly.
Thank goodness for planning ahead since almost all of my quick and easy foods are gone on this elimination diet. This is where it really comes in handy to plan ahead (like the wild rice that has to simmer for almost an hour!) for your meals. Especially with soccer practice all week!
So, here’s what’s on tap this week:
Monday – Taco Salad with Ground Turkey
Tuesday – Chicken Fried Rice (but with leftover Turkey instead)
Wednesday – Almond Crusted Chicken Breast with Spinach
Thursday – Brown Rice Pasta with Vegetables
Friday – Quinoa and Wild Rice Salad with Kale
Saturday – Leftover Buffet
Sunday – Lentil and Brown Rice Casserole
