I was going through my freezer this past week, and I realized that I have an enormous amount of food already prepared – thanks to freezer cooking! So, this week marks a deviation to my elimination diet plan as well as my usual menu planning.
I started my elimination diet last week, but found the large stash of food in the freezer to be a distraction – and of course, not wanting to waste any food, I did eat things that were not allowed on the elimination diet. So, here’s my revamped plan – I am going to continue eating foods mostly on the elimination diet list that are okay, but will have some meals from the freezer as well. The key here is that I am now making better choices – so, when I run out of something that was not exactly the best choice, I don’t buy the same food again, but instead, make a better choice the next time I am at the grocery store.
So, the goal for the Clean elimination diet for the next several weeks is to gradually shift to better food choices, and then, once the stash of not so healthy meals is depleted, and has been replaced by healthier choices, I will be ready to do a few days of the elimination diet before the three week Clean Program.
Now, on to Menu Plan Monday – this week is entirely different as well, because I actually have enough meals already prepared and in the freezer to last us the entire week (at least). So, this week, we are eating from the freezer with a few salads thrown in for good measure – especially since we are receiving lots of lettuce from our garden.
What a time saver! No cooking this week!
