Menu Plan Monday – July 5

I can’t believe it’s July already!  Where is the summer going?  (Perhaps it is because until the past few days, it’s been 55 degrees and raining here … hardly feeling very summery!  But, now it’s 90 and HOT!  Nice…)

This past week, as I am working more on my modified elimination diet, and making better choices.  I am exploring raw food cooking, and other foods, and I must say, this requires MUCH more planning than my typical meal plan.  But, I can already see the benefits, as I am feeling better (and I haven’t even gone all the way yet!)!

So, this week is a strange one for menu planning, due to some activities I have planned.  I am also still eating some from the freezer too (since I already made so many meals with freezer cooking).  I’m also experimenting with several new foods and recipes, including raw food recipes, which typically require more planning (some seeds, nuts need to be soaked overnight, etc.).

Here’s what I am going to try this week:

Monday – rice pasta with raw food “cheese” sauce

Tuesday – raw “cheese pizza”

Wednesday – vegetable quinoa

Thursday – freezer meal

Friday – eating out

Saturday – eating out

Sunday – freezer meal

I have found most of the recipes I am trying from Ani Phyo’s Raw Food Essentials and Serene Allison’s Rejuvenate Your Life Recipes for Energy.
