
Bummer. Only day 2 of the cleanse and I am already breaking the rules! I promise to get back on the “straight and narrow” tomorrow! So here’s the mess up. I started out fine today with a smoothie (or a partial one) for breakfast. Then picked up salad with chicken on the way to the beach with the family for my lunch. Good so far. Then, went to go cook dinner, and thought I would try this new red lentil/brown rice/onion “quesadilla” recipe, made on a brown rice flour tortilla. Fast forward an hour or so, and after slaving away in the kitchen to make all of the components of the quesadilla (and some extras, you know me and freezer cooking!), and I even made homemade guacamole…I sat down to eat and finished my plate.
What’s wrong here?? I totally forgot that I was supposed to have a SMOOTHIE for dinner. Oops. After four days of eating off the elimination diet for every meal, I had gotten into the habit (somewhat) of doing that! I’ve learned my lesson, I promise to do better tomorrow. But, it was tasty!
And, in all the cooking, I now have a container of homemade guacamole (avocado, lemon juice, sea salt, pepper, garlic – next time I’ll go a bit easier on the garlic), a container of chipotle seasoned diced chicken (for salads or quesadillas), a container of brown rice/red lentil dish (same as the previous lentil dish, minus the spinach), and a container of brown rice tortillas (that I broke up into pieces on purpose, so I can just pile everything on a plate and not have to cut it all up!). Whew. So, that’s several different combos I’ll be enjoying for lunch only the next few days.
Today’s menu then:
Breakfast: Organic Mango/Raspberry Smoothie with Brown Rice Protein Powder – had a few sips of this and my tongue felt a little strange, almost numb, stopped drinking it – perhaps a mango allergy? I’ve heard from my mother-in-law who believes that she is allergic to mangos, that it’s the oil from the outside of the mango that’s the major allergen, which would have gotten all mixed in, as I peeled it by hand (after washing), and then cut up the mango, without washing hands in between. So, next I’ll try mango juice out of a container to see if that makes a difference.
Lunch: Salad with Chicken
Snack: Apple Pie Larabar – I liked this one too – so we are 4 for 4 on the raw energy bars!
Dinner: Red Lentil/Brown Rice/Onion (from my garden)/Chipotle Chicken (pasture-fed) Quesadilla with a Brown Rice Tortilla and Homemade Guacamole.
See you tomorrow for another fun-filled day. Back to Monday, though, which tends to be a bit more organized than the weekends, because we schedule our weekdays (but not the weekends). Ahhh…structure.
