Quick post today, as I am still reading the Bible in 90 Days, and it’s crunch time with three days to go! Actually, I have just two days – today and tomorrow, because Saturday is going to be a busy one.

Last month as part of the Booking It challenge, I read Real Food on a Real Budget by Stephanie Langford.
In my quest for learning more about food, where it comes from, and what nutritional benefits it has for our bodies, I had come across Stephanie’s book.

One of my favorite things to eat is a breakfast sandwich. And, in past years, I have come a long way from the McDonalds Sausage/Egg/Cheese McMuffin or Burger King Sausage/Egg/Cheese Crossanwich.
My first step toward a healthier breakfast sandwich was to start making them at home.
A friend of mine introduced me to white spelt buttermilk biscuits and I fell in love. The end is near! I am reading through the Bible in 90 Days, and this experience has been nothing short of phenomenal. In fact, I would highly recommend that you read the Bible in a short time like this. It’s much more like a novel, and a lot easier to piece everything together.
Today, It’s day 85 of 90. Just 5 days left to go. I am excited to say that today I finished the Old Testament. That’s right folks! I am now on page 813 out of 1048 – just shy of the 200 page mark!

The weather is getting colder and the leaves are beautiful here.
It’s definitely cooking weather and I’m feeling more inclined to do more baking. I have a list of recipes to try about a mile long, and seem to find more every week! And yet, I am a creature of habit and tend to like to make the same things, over and over and over again. They are our family’s favorites. And, they are also what’s in the freezer

The leaves are changing colors here in Vermont, and with temperatures getting cooler, I am looking ahead to Christmas.

Last month I read Omnivore’s Dilemma by Michael Pollan.
In this 450+ page book, you will find an amazing amount of information about your food and where it comes from.
The book is divided into four sections, where Michael traces the source of a meal from beginning to end.
The first meal is McDonalds, so this section has a TON of information on industrial farming in general, and the source of the McDonalds cheeseburger (primarily corn) specifically.

Chicken Fried Rice is one of my favorite recipes, so I took the basic recipe that my friend gave me years ago, and tweaked it a bit to be more healthy and viola – Healthy Chicken Fried Rice. YUM!! This is one of the staple recipes in our home now.

As you may know, I am reading through the Bible in 90 Days. This has been quite an experience and I am so thankful for everything that God has been showing me through this journey.
I am still catching up. As I mentioned last week, with children back in school, I have more time to dedicate to reading, so I am reading about 50 pages a day Monday through Thursday.
