
One of my favorite things to eat is a breakfast sandwich. And, in past years, I have come a long way from the McDonalds Sausage/Egg/Cheese McMuffin or Burger King Sausage/Egg/Cheese Crossanwich.
My first step toward a healthier breakfast sandwich was to start making them at home.
A friend of mine introduced me to white spelt buttermilk biscuits and I fell in love. These melt in your mouth and are just the best way to enjoy a breakfast sandwich (or any kind of jelly, etc.) in the morning. Now, I also use local cheese and pastured eggs to increase the nutrient content of my breakfast sandwich, but I am still a sucker for sausage. I do use turkey sausage sometimes, and I’ve also tried the breakfast sandwiches with other meats like turkey slices or chicken breasts. All combos are good, but they start with the scrumptious spelt buttermilk biscuit.
Here’s the recipe:
Spelt Buttermilk Biscuits
2 cups white spelt flour
1 tbsp baking powder
¼ tsp baking soda
2 tsp sugar
½ tsp cream of tartar
¼ tsp salt
½ cup butter
¾ cup buttermilkPreheat oven to 450. Stir dry ingredients and cut in butter until mixture resembles course crumbs. Add buttermilk all at once and mix until dough clings together. On a floured surface, knead dough 10-12 times and roll to ½ inch thick. Cut into circles and bake 10-12 min.

Hi girlichef. I should probably mention that this is not just spelt flour, it is WHITE spelt flour. Apparently there is a difference, and I have never tried to make these with anything other than white spelt flour. And, this is as far as my spelt experience goes too

But, I SO appreciate you coming back to link up, and the Beer Bread looks amazing! And SO simple. I must try it. Yum! I love spelt flour but I don’t think I’ve ever only just used spelt in my baking. (I often combine flours, especially when a recipe calls for wheat flour). I am excited to try these. One of my favorite sandwiches is egg, cheese and avocado with thinly sliced zucchini rounds and cayenne pepper. Yum.
