CLEAN Round 2, Day 3

It’s day 3 of the 21 day CLEAN program.  Today was another good day!  I spent the day cleaning and creating a pantry and freezer inventory (post to come next week!) so when I looked up at the clock, I found that I had already missed breakfast and most of “lunch”!  I was hungry though, so here’s what I had to eat today:

Breakfast – none

Lunch – Lentil Chicken Quesadilla with Homemade Guacamole

Dinner – Mango Juice with Cherries

Usually when I do the mango juice and cherries, I just blend them together (by the way, I LOVE . . . → Read More: CLEAN Round 2, Day 3

CLEAN Round 2, Day 2

It’s day 2 of round 2 of the 21 day CLEAN program.  All good here!

Here’s what I had to eat today:

Breakfast – none

Lunch – Chicken/Black Bean “Taco” Salad with Homemade Guacamole

Snack – Cucumber Salad

Dinner – none

I’ve learned to listen to the signals of hunger and fullness that my body gives (and God provides) as a way to signal when to eat and when to stop (a concept I have learned from Weigh Down).  So, I eat only when physiologically hungry (my stomach growls), and I stop when pleasantly satisfied.  I’ve learned that by . . . → Read More: CLEAN Round 2, Day 2

CLEAN Round 2, Day 1

It’s time for CLEAN again!  This time, I am committed to getting through the entire 21 days with minimal hiccups!  I really want to know what food(s) might be causing my digestive issues once and for all!

It was a pretty uneventful day, coming off of my 3 day fast (I actually ended up with 3 1/2 days).

The fast, by the way, was wonderful and very spiritually enriching (I would highly recommend reading the book Fasting by Jentezen Franklin if you want to learn more about fasting for spiritual reasons), as always.  And, I am praising God for . . . → Read More: CLEAN Round 2, Day 1

Dr. Laura’s Tasty Tuesday – Lentil Chicken Quesadillas with Homemade Guacamole

As part of the CLEAN program (today is round 2, day 1), I have learned to experiment with several dishes to create something new.

As a background, I LOVE quesadillas.  I am the quesadilla queen and could probably write a book about the different quesadillas of the world and rank them all.

However, pretty much the entire quesadilla (minus the chicken and guacamole) is entirely off the list of okay foods during the clean program.

So, I took the lentil dish recipe, and a recipe for brown rice quesadillas I found on the CLEAN . . . → Read More: Dr. Laura’s Tasty Tuesday – Lentil Chicken Quesadillas with Homemade Guacamole

Menu Plan Monday – August 23

It’s really hard to believe that the summer is nearly over and children are starting school soon (or, in some cases, have started already!).

And, since it is the end of the summer, that also means lots of canning and preserving too, so I am thankful for the freezer stocked full of good food to eat.

This also makes it easier for me, too, since I will be on the CLEAN program, which is entirely different food.  This means I don’t have to worry about cooking much, because I already have several things stocked . . . → Read More: Menu Plan Monday – August 23

New Blog Design

Well, it’s been a little while since I’ve posted.  Partly because I have been out of town surprising my father for his 60th birthday (all six kids together (the last time was 5 years ago), and he had no idea!), and partly because I have been working on revamping this blog with the goal of making it more user friendly and readable.

I’ll be posting more soon, because I have loads to tell you about my first canning experience using a pressure canner, as well as our first batch of sourdough starter, the butterfly experiment, and my journey back . . . → Read More: New Blog Design

CLEAN – Day 15

Day 15 on the CLEAN program, and I must confess that yesterday did not end up as planned.  I had an event last night that I needed to attend, and because I was a little rushed (and a little not yet hungry), I scooted out the door without having my juice as planned.

Well, let’s just say that the event went longer than I had expected, and around 9:30 pm, I was very hungry, and so were my children.  Because it was already 2 hours past their bedtimes, we did the easy route – the McDonald’s drive thru.  I . . . → Read More: CLEAN – Day 15

CLEAN – Day 14

Ahhh….feeling much better today for day 14 of the CLEAN program!  Hard to believe there is only 7 days left!  Despite my giving in to the pretzels and having an off day, this has actually been easier than I expected.  It’s hard to believe that it’s been 18 days of eating foods that are more nutritional than what I am used to!

And, yesterday, my new Excalibur Dehydrator arrived!  So, it’s all washed and ready for use.  In fact, I am soaking walnuts and buckwheat groats for two different granola recipes (in my never-ending search for granola bars that . . . → Read More: CLEAN – Day 14

CLEAN – Day 13

Back on track today with day 13 of the 21 day CLEAN program.  WOW.  What a difference.  Yesterday’s sluggish feeling and extreme tiredness gave way to a complete revolt by my digestive system this morning!  So, I guess wheat could be a problem!  I took it easy this morning and noon, and only started to feel back to normal this afternoon.  And, guess what?  The energy came back too!  (This is a good thing!)

Here’s what today looked like:

Breakfast: Berry Smoothie (only drank about half of it)

Lunch: Three Apple Larabars

Dinner: Lentil and Chicken Quesadilla

So, since . . . → Read More: CLEAN – Day 13

CLEAN – Day 12

Today started off well, but I have to admit, I am a bit tired of smoothies.  So, I decided to go out to lunch.  By the time I got to lunch, I decided to give myself a day off.  Just experimenting here.

So, I ate normal food today, had some nutritious things (like the salad for lunch, although the dressing had tomatoes and dairy in it I am sure, and corn too), and some not so nutritious things (Three Musketeers candy bar in the afternoon and a pretzel for dinner), plus a soda too.

The verdict…I am exhausted.
