This week we are excited to have LOTS of family coming for a visit! I love visiting with family, and in recent years, I have really come to cherish that time together even more than I did before. So, I also enjoy cooking for my family when they come!
To see what I would make this week, I pulled out my trusty freezer inventory to check what I had in stock. I also cleaned out my garden this past weekend (freeze warning imminent), so I have some fresh produce and I am canning some too. Also, . . . → Read More: Menu Plan Monday – October 4

The weather is getting colder and the leaves are beautiful here.
It’s definitely cooking weather and I’m feeling more inclined to do more baking. I have a list of recipes to try about a mile long, and seem to find more every week! And yet, I am a creature of habit and tend to like to make the same things, over and over and over again. They are our family’s favorites. And, they are also what’s in the freezer
This week:
Monday – Leftover Buffet
Tuesday – Spaghetti with Homemade Tomato Sauce

I can hardly believe it is another Monday! Why does the weekend go by so fast? We had company visiting this weekend and had a wonderful time. They were so impressed at my freezer inventory! I would whip it out every time I got ready to cook something, and I would create their “menu” of foods for them to choose from what they would like to eat.
I definitely went on a bit of a baking spree with our company here. Although we did eat out at our favorite local joint, I also made Breakfast Sandwiches . . . → Read More: Menu Plan Monday – September 20

Another week, another menu! We are still eating from the freezer this week. In fact, I should have a little impromptu contest to see how little I can spend on groceries this month while we eat from our pantry!
It’s only because I took the time to create an inventory first, then planned meals accordingly that we are able to eat so much from our freezer (because we know what is in there!).
So, here’s what is on tap for us this week:

Happy Labor Day all!
Another week, another menu, and another week eating from the freezer!
I was so shocked when I did our pantry and freezer inventory – it’s really an eye-opening experience, and I had not done one in quite a while. I was amazed at all there was to eat, right in our own home! That’s in part thanks for freezer cooking. I kept putting things in to the freezer, but not taking them out! HA!
So, this week continues a week of eating out of the freezer and pantry.

It’s Menu Plan Monday!! And, this week is super simple!
Over the weekend, I completely cleaned out and inventoried my pantry and freezer. (Post coming soon on organizing your pantry!)
I found LOTS of leftovers when I went through everything (thanks to freezer cooking), so our menu plan for this week is:
LEFTOVERS!!
With children back in school, and myself on the CLEAN program (which I found leftover Lentil Dish in the freezer!), meals will be simple this week. Pick, heat and serve!
To your success,
Dr. Laura

It’s really hard to believe that the summer is nearly over and children are starting school soon (or, in some cases, have started already!).
And, since it is the end of the summer, that also means lots of canning and preserving too, so I am thankful for the freezer stocked full of good food to eat.
This also makes it easier for me, too, since I will be on the CLEAN program, which is entirely different food. This means I don’t have to worry about cooking much, because I already have several things stocked . . . → Read More: Menu Plan Monday – August 23

It’s time for Menu Plan Monday again!
Since I have started my CLEAN program, my meals are simple: smoothie for breakfast and dinner, and lunch from the elimination diet okay list. So, here’s what I am eating for lunches, since the smoothies don’t require any planning at all.
Monday: Salad with Grilled Chicken (pasture-fed)
Tuesday: Lentil Dish Quesadilla
Wednesday: Salad with Grilled Chicken (pasture-fed)
Thursday: Chicken Fried Rice (made the CLEAN way with brown rice/wild rice and no soy sauce) (pasture-fed)
Friday: Leftover Buffet
Saturday: Leftover Buffet
Sunday: Lamb Gyro (minus the pita, extra cucumber)

I can’t believe it’s July already! Where is the summer going? (Perhaps it is because until the past few days, it’s been 55 degrees and raining here … hardly feeling very summery! But, now it’s 90 and HOT! Nice…)
This past week, as I am working more on my modified elimination diet, and making better choices. I am exploring raw food cooking, and other foods, and I must say, this requires MUCH more planning than my typical meal plan. But, I can already see the benefits, as I am feeling better (and I haven’t even gone . . . → Read More: Menu Plan Monday – July 5

I was going through my freezer this past week, and I realized that I have an enormous amount of food already prepared – thanks to freezer cooking! So, this week marks a deviation to my elimination diet plan as well as my usual menu planning.
I started my elimination diet last week, but found the large stash of food in the freezer to be a distraction – and of course, not wanting to waste any food, I did eat things that were not allowed on the elimination diet. So, here’s my revamped plan – I am . . . → Read More: Menu Plan Monday – June 28 and My New Plan For Clean Elimination Diet
